Have Your Mushrooms
Mushrooms are an amazing fungus. Some people eat them because they like them, other people eat them for the benefits, and still others eat them for both reasons.
So how would you prepare mushrooms to eat them? There are many options, such as soup, stir fry, tea, and even coffee. Let’s talk about soup today:
Soup is a great choice. There are many options when it comes to putting mushrooms in soup. You could make a vegetable soup, a meat and vegetable soup, some other combination, or just mushroom soup.
Mushroom soup is a versatile food; it can be eaten on its own, or it can be used in other recipes. Something that I ate a lot of growing up were meat balls cooked in mushroom soup, with mashed potatoes, and some other vegetable. So as not to waste any of the soup, it was thickened into a gravy after cooking the meat balls, and poured over the mashed potatoes.
There are so many options when it comes to mushroom soup, where do you start? There are, of course, a number of pre-made or condensed options. We always recommend homemade, but understand that sometimes people don’t have time to cook something from scratch.
One my favorite soups comes from Chef Michael Smith. It is easy to make, very tasty, and impresses the pants off guests.
Like any recipe it can be modified if you don’t want to use certain ingredients. If you don’t drink alcohol, you can substitute the wine for more stock. Similarly, if you are a vegetarian, you can substitute the chicken stock for vegetable stock.
This soup is best served fresh. Since mushrooms do not reheat very well, I recommend blending it if you are going to be saving any for another day.
