Mushroom stuffed Bread Rolls

Normally when we think of bread, first thought comes to our minds toasted bread with butter, cream cheese, jam or any spread. Sometimes we think about sandwiches.

Today we are going to make stuffed bread with lots of veggies like onion, garlic, bell peppers, mushrooms, spinach; all are rich in protein, iron, vitamins, minerals. Spinach has lot of iron while mushrooms have lot of protein. For this recipe I used white button mushrooms, you can use any mushrooms of your choice. There is so much variety of mushrooms available like Portobello, Chaga, Turkey tail, Cordyceps, Maitake, Lion’s mane, Shiitake etc.

It’s very simple and quick recipe ready in just few minutes. Now it’s time to make this yummy dish……

Ingredients:

  • 5 baguette or baguettine breads (oblong shaped)
  • 1 teaspoon olive oil
  • 1 cup onion, finely chopped
  • 2 cloves of minced garlic
  • 2 cups of white button mushrooms, chopped
  • 1/2 cup chopped green and red bell peppers
  • 1 cup chopped spinach
  • salt and ground black pepper to taste
  • blend of grated mozzarella and cheddar cheese

Method:

  1. Preheat oven to 400°  Fahrenheit
  2. Heat oil over medium heat in a pan. Put onions, garlic, mushrooms and bell peppers. Saute till tender but crispy not soggy
  3. Mix salt and ground black pepper
  4. In the last add spinach, saute for 2-3 minutes. Mix well
  5. Take out the mixture in a bowl to let it cool
  6. Take a sharp knife and carefully cut oblong holes from the top of the bread rolls. Make sure you are not cutting the bread from the bottom so that it stays intact. Scoop out the bread from inside
  7. Place the bread rolls on a baking tray. Spoon the mixture into the bread rolls and top them with grated cheese
  8. Place in the oven and cook for approximately 8-10 minutes or till cheese melts
  9. Remove from the oven and serve hot
